Ingredients
4 medium potatoes, peeled (or unpeeled if you use organic) and cut into chunks
¼ lb bacon slices, cut into 1inch pieces
2 tsp olive oil
¼ tsp dried rosemary or 1 tsp fresh rosemary (finely chopped)
Sea salt
Black Pepper
Directions
Preheat oven to 450°F.
Arrange potato chunks onto a baking dish. Sprinkle with rosemary, olive oil and salt and pepper. Toss well. Top with the bacon and bake in the oven for about 30 minutes or until the potatoes are tender and the bacon crisp.
Enjoy this easy-to-bake dish with a green salad. Serves 4.
